Abstract

UK: Робота присвячена дослідженню особливостей створення проєкту кав’ярні формату «coffee to go». У роботі розглянуто теоретичні основи функціонування підприємств ресторанного господарства та сучасні тенденції розвитку кавового бізнесу. Другий розділ присвячений аналізу ринку кав’ярень міста Дніпро, вибору місця розташування, формуванню концепції закладу, асортименту продукції, меню та організаційної структури персоналу. У третьому розділі здійснено технологічне проєктування кав’ярні формату «coffee to go», визначено виробничі потужності, обладнання та організацію процесів обслуговування. EN: The paper is devoted to the study of the peculiarities of the creation of a coffee shop project of the «coffee to go» format. The paper examines the theoretical foundations of the functioning of restaurant enterprises and modern trends in the development of the coffee business. The second section is devoted to the analysis of the market of coffee shops in the city of Dnipro, the choice of location, the formation of the concept of the establishment, the range of products, the menu and the organizational structure of the staff. In the third chapter, the technological design of the coffee shop of the «coffee to go» format was carried out, the production capacity, equipment and organization of service processes were determined.
